  • 1 1/4 lb pork tenderloin

  • 2-4 tbsp oil

  • sea salt & pepper, to taste

  • 4 corn on the cobs

  • 1 lb baby potatoes

  • 1 red onion, large diced

  • 1 zucchini, cut in half and then 1/4-inch sliced

👨‍🍳 Directions

  1. Coat pork with 1 tbsp of oil, season with salt and the Rooted Path BBQ Blend (1/2 tbsp per serving).

  2. Place pork in the centre of a sheet pan.

  3. Add each piece of corn to foil, enough to wrap individually. Coat each with a bit of oil and season with salt and pepper. Wrap tightly.

  4. Add corn to the sheet pan.

  5. Toss potatoes and onions in oil and season with salt and pepper. Add to the sheet pan and bake with pork and corn for 15 mins.

  6. Toss zucchini in oil and season with salt and pepper.

  7. Turn pork, add zucchini to the sheet pan and bake for 10 more mins or until pork is cooked, internal temperature should read 145°F, and vegetables are tender.

  8. Remove from oven and let rest for 10 minutes.

Store any leftovers in an airtight container in the fridge for 4-5 days.

🔄 Substitutions

Switch up the protein. Swap the pork tenderloin for chicken for an easy variation that works just as well with the Canadian BBQ Blend:

Chicken Breasts • Chicken Thighs

Change up the sides: Swap the potatoes, corn, red onion or zucchini for sweet potatoes, squash, peppers, broccoli, cauliflower, or whatever seasonal vegetables you have on hand.

Follow the seasons: This sheet pan meal is easy to change throughout the year. Choose vegetables that are fresh, in season, or already in your kitchen.
