Wrapped in warm tortillas, they’re a fun and colourful meal with just the right balance of smoky, savoury, sweet and fresh flavours.

Canadian BBQ Chicken Tacos with Apple Slaw

🌿 Rooted Path Ingredients

🫕 Before You Start

  • Rooted Path Canadian BBQ Blend

  • Remove chicken from the fridge 15-20 minutes before cooking

  • Wash and dry apples

🛒 Your Grocery List

*Divide ingredients in 1/2 for 2 servings or times ingredients by 1 1/2 for 6 servings

  • 1 1/4 lb boneless skinless chicken thighs or breasts

  • sea salt

  • 1 tbsp oil

  • 1 cup chicken broth

  • 2 tbsp tomato paste

  • 1/4 cup mayo

  • 1 tbsp apple cider vinegar

  • 1 1/2 tsp maple syrup or honey

  • 1 1/2 tsp Dijon

  • salt and pepper, to taste

  • 4 cups coleslaw

  • 1 apple, cut into matchsticks

  • 12 soft shell tacos

👨‍🍳 Directions


CHICKEN

  1. Season chicken with salt and the Rooted Path BBQ Blend (1/2 tbsp per serving).

  2. Add 1 tbsp of oil to a pan over medium-high heat. Once oil is hot, add chicken and cook for 3 minutes per side.

  3. Remove chicken from pan and set aside.

  4. Add broth and tomato paste to the pan. Mix until the tomato paste is dissolved.

  5. Meanwhile, shred the chicken. Don't worry if it's still pink.

  6. Return chicken to the pan and mix. Let chicken simmer for 2-5 minutes or until sauce is reduced and chicken is fully cooked.

  7. Enjoy on a soft shell taco with apple slaw.


SLAW - start while chicken is cooking

  1. In a medium bowl, whisk together mayo, vinegar, maple syrup, Dijon, salt and pepper. Add coleslaw and apples and toss.


Store any leftovers in an airtight container in the fridge for 4-5 days.
