Canadian BBQ Chicken (or Chickpeas) Cobb Salad

Fresh, colourful and packed with flavour, this Canadian BBQ Chicken Cobb Salad pairs tender chicken seasoned with our Rooted Path Canadian BBQ Blend with crisp greens, fresh vegetables, eggs and blue cheese. The smoky, slightly sweet chicken adds a Canadian twist to this hearty salad.


Satisfying enough for dinner but easy to prep ahead for lunch, this recipe is a great Make-Ahead Favourite. Prepare the ingredients ahead of time, store them separately, and assemble when you’re ready to eat.

Canadian BBQ Chicken Cobb Salad

🌿 Rooted Path Ingredients

🫕 Before You Start

  • Rooted Path Canadian BBQ Blend

  • Preheat oven to 425°F

  • Remove chicken from the fridge 15-20 minutes before cooking

  • Wash and dry produce

🛒 Your Grocery List

*Divide ingredients in 1/2 for 2 servings or times ingredients by 1 1/2 for 6 servings

  • 1 1/4 lb boneless skinless chicken breasts or 1 can no-salt added chickpeas

  • 5 tbsp oil

  • sea salt, to taste

  • 4 eggs

  • 6 cups romaine lettuce, chopped

  • 2 tomatoes, wedged

  • 1/2 red onion, thinly sliced

  • 4 oz blue cheese, crumbled

  • 3 tbsp apple cider vinegar

  • 1/2 tbsp Dijon

  • 1 tsp maple syrup or honey

  • pepper, to taste

👨‍🍳 Directions


CHICKEN

  1. Coat chicken with 1 tbsp of oil, season with salt and the Rooted Path BBQ Blend (1/2 tbsp per serving).

  2. Place chicken evenly on a sheet pan and bake for 15 mins. Turn chicken and bake for 10 more mins or until cooked through, internal temperature should read 165°F. If using chickpeas instead of chicken, bake for 15 or until toasted.

  3. Remove chicken from oven, tent with foil and let rest for 10 minutes.


EGGS - start while chicken is cooking

  1. Add eggs to a small pot and cover with cold water.

  2. Bring water to a boil and reduce heat to medium.

  3. Simmer for 10 minutes and then run under cold water for 15 minutes.

  4. Crack eggs and remove shells.

  5. Cut eggs in half.


DRESSING - start while eggs are cooking

  1. In a small bowl, whisk vinegar, Dijon, maple syrup and 4 tbsp of oil, season with salt and pepper to taste.


ASSEMBLE

  1. Evenly portion romaine, tomatoes, onions, blue cheese and chicken.

  2. Top with dressing and mix.


Store any leftovers in an airtight container in the fridge for 4-5 days.
